AAC Yellow 80 is a mustard variety developed by Dr. Bifang Cheng and her team with support of the multi-party collaboration that is funded in part by the Canadian Agricultural Partnership program.

- Yield gains over traditional open pollenated yellow mustard varieties
- Composite yellow variety requiring certified seed use only.
- AAC Yellow 80 shows a harvested grain sample, significantly brighter in seed color.
- Field scale demo strips in 2020 said that it was easier to harvest and noted a nicer sample than Andante.
